Cheesy Cheesecake!

Ingredients 

- butter cookies 

- cream cheese

- Salt

- Sugar

- Coconut

Directions 

-Grind 1 packet of biscuits fine and keep aside.

-It should hold together when you hold it in your fist. You can add any nuts of your choice if you want when grinding and sugar depending on how sweet you want it.

-Now spread this on your bake dish nicely evenly to make a crust at the bottom and sides of your dish. 

-Bake this in the oven for 10 minutes at 350 degrees Fahrenheit.

-Take a cup of cream cheese at room temperature and whisk it in the blender or with hand until it's light and fluffy.

-Add 1/2 tsp salt, 1/3 cup yogurt or sour cream (I use yogurt), 

-Add 1 cup sugar

- I also added dry grated coconut. Beat again for 5 more minutes and pour it over the crust already baked. 

-Cook for 10 minutes at 350 and then reduce to 300 degrees and cook for another 30 minutes. Refrigerate overnight. 

My Opinion

I am obsessed with cheesecake. The first time I had, it was at the cheesecake factory, and I fell in love with it. I think anything with cream cheese tastes like heaven. So to make things special during quarantine, my mom and I decided to make Indian style cheesecake! We wanted to make our own cream cheese at home because we didn't want to go and shop. So we decided to make cream cheese out of paneer (which is Indian cottage cheese). When I first tasted, I was shocked because I hate cottage cheese, but when I tasted, it is was so good. It was challenging to make this dish because being a vegetarian; I could not use eggs, so we had to rely on yogurt to get the silky texture.

I could not sadly use fresh vegetables from my garden, but I was proud that I limited the use of unwanted preservatives. According to my research, dairy cows release large amounts of methane, which is a worse greenhouse gas than carbon dioxide, and let's not forget the amount of feed and antibiotics that the cows need.

EWG, an American activist group, recommends eating less cheese. But it just so happens that cheese is delicious. So, while you may not be able to go without, eat lower-fat cheeses, such as skim mozzarella, gouda, and cottage cheese, which have less effect on the environment and your health.

While researching, I was upset after finding this information, so I have decided to make vegan cheesecake out of tofu next time!
